my favourite chicken marinade + chicken stir fry recipe :)

as promised, i am putting up my recipe for the yummiest marinade for chicken. whether it is chicken breasts or chicken pieces or even a whole chicken, this marinade works every time!

  • salt
  • lemon pepper
  • ground black pepper
  • lemon juice (optional)
  • robertson's peri peri spice (optional)
  • pick 'n pay's coriander, lime and chilli spice
  • olive oil
  • finely chopped fresh coriander (optional)
  • ginger and garlic
literally mix it all together and let it sit for however long you want. and don't be afraid to chop and change, add or subtract according to your taste buds. this is quite an oriental marinade but it works because chicken is such a bland meat. please do try it :)

now for the chicken stir fry recipe.

well it is really simple because all i did was marinate my chicken breasts in the above marinade and left it in the fridge for 30 minutes. i was lazy so i used woolworth's "ready to wok crunchy vegetables" which included chinese cabbage, brocolli, julliened carrots, spinach leaves and red cabbage. literally stir fried the chicken for two minutes, removed it from the wok and added the vegetables into the wok with a bit of ginger and garlic and salt and pepper, stir fried it for 6 minutes, added the chicken back into the wok, gave it a toss and it was all done.
