INGREDIENTS:
- 250g spaghetti
- 4 chopped ripe tomatoes
- half a tin of tomato puree (about 250g)
- half a cup of spinach
- 5 lamb-mint sausages
- a small onion
- 3 garlic cloves
- rosemary and mint
METHOD:
- put your pasta on to boil
- in a pan, saute your onion and garlic then add your chopped tomatoes. cook that down nicely and then add your tomato puree.
- in a separate pan, fry your sausages. when that's done cut them up to add to the pasta sauce at the end.
- add salt and pepper to the pasta sauce as well as the rosemary and mint.
- let it cook down slowly on low for a good 15-20 minutes.
- add your sliced sausages
- drain the pasta and add to the sauce.
- garnish with parsely and you're ready to serve!!!
i made this dish the other day for lunch. it was freezing and i spent the afternoon munching on it while watching my favourite music dvds. i hope you all enjoy it and try it if you can!
