MUSHROOM LINGUINE

INGREDIENTS:
  • one punnet button mushrooms
  • four small cloves of garlic (this may seem like a lot, but the garlicy flavour is essential for this dish!)
  • two finely chopped green chillis
  • olive oil
  • fresh finely chopped parsley
  • lemon juice
  • half a packet of linguine


this may seem like an obvious dish, but it is so amazing that this simplicity of this dish needs to be appreciated!

METHOD:
  • put your pasta on the boil in boiling salted water
  • in a pan, heat up olive oil on a medium heat and add in garlic and chilli
  • saute for a few seconds and then add your mushrooms in.
  • saute for a few minutes and then squeeze in your lemon juice.
  • add the chopped parsely at the last minute, drain the pasta and add to the sauted mushroom.
there is technically no sauce to this pasta dish and for that reason leave a bit of the cooking water in the pasta so that it combines. plate up and add a little extra virgin olive oil over the top to serve!

BRUSCHETTA (V)

one of my favourite things to make as a snack for lunch (or light dinner) is bruschetta. as today is a monday and i am vegetarian today, i decided to make wonderful caramelised onion, garlic mushroom and red pepper bruschetta. if you like add some mozzarella or cheddar on top (the combination with the caramelised onion is just mind blowing!)

INGREDIENTS:
  • one large onion
  • half a punnet of mushrooms
  • two small sweet red peppers
  • cheddar or mozzarella (optional)
  • sugar
  • balsamic vinegar
  • salt and pepper
  • lemon juice
  • one large clove of garlic


METHOD:
  • in a pan, add a small amount of oil and saute the onions slowly until they are translucent and soft, but not golden brown. when it reaches this stage, add in about a tablespoon of sugar and balsamic vinegar and let it reduce. set aside.
  • in another pan, saute the mushrooms and peppers together with roughly chopped garlic. when almost done to your liking, add in a squeeze of lemon juice, salt and pepper to taste and parsley to finish.
  • rub some garlic on your bruschetta (which i bought ready made) which you can make by cutting up a baguette, drizzling some olive oil on top and placing in the oven - and then layer on the onion and mushroom and pepper.
  • add the cheese on top and grill for a few minutes until the cheese melts and you're ready to serve!
